To create flower-shaped carrot slices, cut several grooves lengthways along each carrot
before slicing it. Slice each carrot into very thin slices, using the slicing cutter of a grater or a
sharp knife.
Combine the carrot, celery and cilantro in a bowl. Combine the dressing ingredients thoroughly. Just
before serving, toss the carrot mixture in the dressing and transfer to a serving dish.
