Carrot & Cilantro Salad

4 large carrots
2 celery stalks, cut into matchsticks
2 tablespoons roughly chopped fresh cilantro
1 tablespoon sesame oil
1 1/2 tablespoons rice vinegar
1/2 tsp. sugar
1/2 tsp. salt

To create flower-shaped carrot slices, cut several grooves lengthways along each carrot before slicing it. Slice each carrot into very thin slices, using the slicing cutter of a grater or a sharp knife. Combine the carrot, celery and cilantro in a bowl. Combine the dressing ingredients thoroughly. Just before serving, toss the carrot mixture in the dressing and transfer to a serving dish.
