Broccoli Soup


1 onion, chopped
1 garlic clove, minced
1 tablespoon oil
1 bay leaf
1 pound broccoli
2 1/2 cups vegetable stock
Salt & Pepper
Juice of half a lemon

Saute onion and garlic in oil with the bay leaf. Add broccoli and stock. Simmer covered for 10 minutes. Remove bay leaf, season, and serve.
