Veggie Chili

1 yellow onion, chopped
1 bell pepper, chopped
1-2 tbs. olive oil
1 can kidney beans
1 can garbanzo beans
1 small can tomato sauce
1 can stewed tomatoes
chili powder, to taste
cumin, to taste
salt and pepper, to taste
Fry the onion and bell pepper in the olive oil, until the onion is translucent. Add the remaining ingredients, and season to taste. I use about 2 tablespoons chili powder and 1 tablespoon cumin, but those aren't exact measures. The technique is to add the seasonings by the spoonful, stir, and taste until you like it. This is great served over cooked brown rice.
