Annie's Favorite Oatmeal Pancakes

3 cups oatmeal
1/2 cup whole wheat flour
(or white flour if you prefer)
1/2 tsp salt
2 tsp baking powder
(or 1 tsp soda + 1 tsp powder if using buttermilk)
1/4 cup canola oil
one egg
2 cups milk or buttermilk

Put the dry ingredients in a bowl. Mix the liquid ingredients together and slowly add to bowl with the dry ingredients. Stir up batter. Don't overmix,stir just until blended.

Spoon onto hot oiled griddle. When it starts to bubble, flip the pancake over.
